The Gluten Free Princess
I've been living with Celiac disease for 15 years. My first reaction was to go vegan but I liked meat too much. My first trip to the grocery store after my diagnosis lasted for about an hour and a half because I had to read the ingredients on every label before I could buy it. The only thing I knew was that 99% of the frozen food aisle was off limits to me, and I lived off of frozen food meals. They were my go to meals when I got home from work. I also had to go through the cupboards and packed up anything that had wheat or was processed in the same facility that processed wheat. I gave all of it to the people I work with. They made out like bandits because I like to bake and stocked up on flour and cake and brownie mixes. I had to relearn how to bake. I also had to find out where to buy the ingredients for my new lifestyle.
I found some
gluten free products at the the Piggly Wiggly which led me to the gluten free store online. My best find was the Gluten Free store in Northbrook,but sadly it closed about 2 years ago. I would buy something new everytime I went and go home and experiment. I had to learn different ways to cook gluten free because cooking gluten free is different from "regular" cooking.
